Amy’s Homemade Beef Stew Instant Pot Recipe

Ingredients
- 3 lbs Beef Stew Meat cut into 1 inch chunks
- Salt and Pepper
- 3 Tbsp Avocado oil (I use bacon grease)
- 2 medium onions cut in half and then into about 8 wedges
- 2 stalks of celery
- 2 Tbsp Fresh Rosemary
- 2 Tbsp Fresh Thyme (hint, I get the poultry pack of fresh herbs in the produce section that has Rosemary, Thyme and Sage)
- 3 Tbsp tomato paste
- 5 cloves garlic, crushed
- 3 Tbsp Worcestershire Sauce
- 1 tsp Redmond’s Organic seasoned salt
- 1 cup Red Wine (try balsamic vinegar instead only 1/4 cup)
- 6 cups Beef broth
- 2 medium zucchini’s chopped
- 2 turnips cubed (omit for lower carb)
- About 2-3 carrots chopped (optional if watching carbs)
- 1 -3 tsp Gucomannan (optional)
- 2-3 tsp xantham Gum (optional)
Directions
- 1. Salt and Pepper the stew meat generously.
- 2. In either Instant pot or frying pan, heat oil or bacon grease by using the Sauté function. Add meat in batches, cooking until evenly browned. Spoon meat aside in a bowl.
- 3. If you used Instant pot to brown meat add Worcestershire sauce and 3 Tablespoons of water to bottom of Instant pot. Scrape the bottom of the pot with a wooden spoon to clean to avoid burning while cooking. Otherwise skip to step 4.
- 4.Add the meat back into the pot (I used a trivet). Then add the onions, chopped herbs, crushed garlic, Tomato paste, Worcestershire sauce (unless used in step 3), Redmond’s seasoned salt, red wine and beef broth. Lock the lid. Cook on high pressure for 30 minutes.
- 5. Quick release the pressure and open the lid. Add the celery, zucchini, turnips and carrots. Lock the lid and pressure cook on High for 5 more minutes.
- 6. (Optional): Whisk in 2-3 tsp of either xantham gum or Gucomannan powder to thicken the stew to make a gravy.
Notes
- Note: I like to meal prep so this is a really large batch! You can halve this if you want a smaller recipe.
- Hint: If you don’t have an instant pot grab a really large stew pot and cook this stove top as desired!
- Hint: If you like a thicker gravy, try using 1 - 3 tsp of glucomannan powder. This is what I use at Thanksgiving to make my Turkey gravy. Reserve some of the juices from the stew and whisk in the glucomannan powder. Once thickened, you can add it back into the rest of the stew.
