Chicken Tortilla Soup Mix In A Jar

Ingredients

  • In the Jar (1 quart)
  • 1 cup long grain rice
  • 2 to 2 ½ cups slightly crushed tortilla chips
  • Seasonings: Mix the following and place in a zip-type sandwich bag.
  • 2 teaspoons chicken base (put in a separate snack size plastic baggie)
  • 2 teaspoons lemon salt flakes
  • 1 teaspoon lemon pepper
  • 1 teaspoon dried cilantro leaves
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ¼ cup dried minced onion
  • 1 wide-mouth quart jar and lid
  • This is the list that the recipient adds when they are ready to cook
  • 6 cups water
  • 1 can diced tomatoes drained
  • 1 can chopped or diced green chilies
  • 1/2 to 1 pound leftover rotisserie Or 1 to 2 Large cans (Costco size) chunk chicken, drained
  • HALF RECIPE makes 1 1/2 quarts (5 3/4 cups)
  • In the Jar (16 ounce)
  • 1/2 cup long grain rice
  • 1 to 1 1/4 cups slightly crushed tortilla chips
  • Seasonings: Mix the following and place in a zip-type sandwich bag.
  • 1 teaspoon chicken base (put in a separate snack size plastic baggie)
  • 1 teaspoon lemon salt flakes
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon dried cilantro leaves
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/8 cup dried minced onion
  • 1 wide-mouth quart jar and lid
  • This is the list the recipient adds when they are ready to cook
  • 3 cups water or broth for more flavor
  • 7.5 ounces canned diced tomatoes drained
  • 1/2 of a 4 oz. can chopped or diced green chilies
  • 4 to 8 ounces leftover cooked chicken such as rotisserie Or 1 Large can (Costco size) chunk chicken, drained
  • 1 to 2 teaspoons bouillon if needed

Directions

  • 1. For the Jar
  • 2. Place ingredients in jar in this order: Add rice to the jar first. Add the seasoning packet into jar. Fill jar with tortilla chips (I put the tortilla chips into a baggie so that they can be easily pulled out and set aside for use later in the soup). Add the lid to the jar. (put chicken base in a separate baggie)
  • 2. Include canned items and the soup mix in a little bag or basket. If doing so.
  • 3. Attach the following instructions to the jar, bag or basket:
  • 5. For the Soup
  • 6. Remove tortilla chips and seasoning packet, and chicken bouillon cubes from the jar and set aside.
  • 2. In a medium soup pot, add the rice and water. Add the diced tomatoes and green chiles, the rotisserie chicken or can of chicken (drained), and the seasoning packet, and chicken base from the jar. Bring to a boil; lower the heat, cover and simmer for 20 minutes. Add more water or chicken broth if needed.
  • 3. Add tortilla chips, replace the cover and simmer 5 more minutes.

Notes

  • To remove chicken base from baggie easier just snip of the corner of the bag, and squeeze the base into the soup pot, and toss the bag in the trash.
  • IF MAKING HALF RECIPE: Suggest these recipe to use up the leftover green chiles and the canned diced tomatoes.
