M's Vegan Goulash

Ingredients
- 1 pound vegan meatless crumbles such as Gardein
- 1 tablespoon minced garlic
- 1 1/2 cups diced yellow or white onion
- 3 cups water
- 2 teaspoons better than bouillon no beef base
- 2 (15 oz.) cans tomato sauce
- 2 (15oz.) cans diced tomatoes with juices
- 1 tablespoon Italian Seasoning
- 2 bay leaves
- 1 1/2 teaspoons black pepper
- 2 cups uncooked elbow macaroni
- 1 cup shredded vegan mozzarella (such as So Delicious brand)
- 1/2 cup Vegan Cheddar Shreds such as So Delicious or follow your heart
- HALF RECIPE (serves 5)
- 8 ounces Vegan meatless ground (such as Gardein meatless crumbles)
- 1 1/2 teaspoon minced garlic
- 3/4 cup dice onion
- 1 1/2 cups water
- 1 teaspoon better than bouillon no beef base
- 1 (15 oz.) can tomato sauce
- 1 (15 oz.) can diced tomatoes
- 1 1/2 teaspoons Italian seasoning
- 1 bay leaf
- 3/4 teaspoon black pepper
- 1 cup uncooked vegan elbow macaroni
- 1/2 cup shredded vegan mozzarella shreds (Such as follow your heart or So Delicious brand)
- 1/4 cup vegan cheddar shreds such as So Delicious, or Follow your Heart brand
- 2 SERVINGS for one or two people
- 4 to 5 ounces Vegan meatless ground (such as Gardein meatless crumbles)
- 3/4 teaspoon minced garlic
- 1/3 cup dice onion
- 3/4 cups water
- 1/2 teaspoon better than bouillon no beef base
- 1/2 (15 oz.) can tomato sauce
- 1/2 (15 oz.) can diced tomatoes
- 3/4 teaspoons Italian seasoning
- 1/2 or small bay leaf
- 1/3 teaspoon black pepper
- 1/4 cup uncooked vegan elbow macaroni
- 1/4 cup shredded vegan mozzarella shreds (Such as follow your heart or So Delicious brand)
- 1/8 cup vegan cheddar shreds such as So Delicious, or Follow your Heart brand
Directions
- 1. In a large skillet over medium heat; add garlic, and onions cook stirring until they are fully cooked.
- 2. Add water, broth, tomatoes, bay leaf, tomato sauce, Italian seasoning, seasoned salt, and pepper; mix well.
- 3. Lower heat and cover; allow to cook for 20 minutes. Stirring occasionally.
- 4. Add uncooked elbow macaroni and stir well; Cover and allow to simmer for about 30 minutes.
- 5. Add meat replacer. continue simmering for another 3 to 5 minutes, once cooked remove the bay leaves.
- 6. Add only the cheddar cheese; stir to combine and melt.
- 7. Add Mozzarella right before serving.
Notes
- If Freezng top with mozzarella and freeze.
