Thai-Inspired Roasted Potatoes

Ingredients
- 1 lbs Yukon Gold potatoes, sliced into 1/2-inch-thick
- 2-3 Cloves Garlic, Minced
- 1 inch Ginger, Fresh Grated
- 1/2 Shallot, Fine Dice
- Extra Virgin Olive Oil
- Kosher Salt to taste
- 1/2 tsp Sichuan Pepper, Ground
- 1/4 tsp Sichuan Chili Powder
- 1 tsp Thai Spice Blend
- 1/2 tbsp Thai Basil, Dried
Directions
- Preheat the oven to 425 degrees F.
- In a bowl Combine potatoes, garlic, ginger spices & herbs. Add just enough olive oil to thinly coat the potatoes and other ingredients.
- Transfer to a baking dish and cover baking dish with aluminum foil.
- Roast in the preheated oven for 20-25 minutes.
- Remove foil and continue to roast until potatoes are browned and edges are crispy, 15 to 20 minutes.
