Ingredients

  • For the fish
  • 4 6-8 oz white fish fillets cod, halibut, or sea bass
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the topping
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped plus extra for garnish
  • 1 tbsp capers optional
  • 2 tbsp lemon juice
  • 1/4 tsp red pepper flakes optional

Directions

  • Preheat the oven: Preheat your oven to 400°F. Lightly grease a baking dish with olive oil.
  • Arrange the fish fillets in the baking dish. Drizzle with olive oil and sprinkle with paprika, oregano, salt, and black pepper.
  • In a bowl, mix the cherry tomatoes, garlic, parsley, capers (if using), lemon juice, and red pepper flakes. Spoon the mixture evenly over the fish fillets.
  • Bake for 15-18 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
  • Sprinkle the baked fish with extra fresh parsley and serve with lemon wedges. Pair with rice, couscous, or a side salad for a complete Mediterranean meal.
