Ingredients
- For the fish
- 4 6-8 oz white fish fillets cod, halibut, or sea bass
- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the topping
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped plus extra for garnish
- 1 tbsp capers optional
- 2 tbsp lemon juice
- 1/4 tsp red pepper flakes optional
Directions
- Preheat the oven: Preheat your oven to 400°F. Lightly grease a baking dish with olive oil.
- Arrange the fish fillets in the baking dish. Drizzle with olive oil and sprinkle with paprika, oregano, salt, and black pepper.
- In a bowl, mix the cherry tomatoes, garlic, parsley, capers (if using), lemon juice, and red pepper flakes. Spoon the mixture evenly over the fish fillets.
- Bake for 15-18 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
- Sprinkle the baked fish with extra fresh parsley and serve with lemon wedges. Pair with rice, couscous, or a side salad for a complete Mediterranean meal.
