Segedínsky Guláš - Pork & Sauerkraut Stew

Ingredients
- 1 pound 1 3/4 ounces pork shoulder or ribs, cut into bite-sized pieces
- 1 large onion, chopped
- 2 cloves garlic, minced
- 8 3/4 ounces sauerkraut, drained and rinsed
- 1 tablespoon caraway seeds
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons vegetable oil
- 1 cup beef broth
Directions
- Heat oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute.
- Add pork and cook until browned on all sides, about 5-7 minutes.
- Add sauerkraut, caraway seeds, paprika, salt, and pepper. Stir to combine.
- Pour in beef broth and bring to a simmer.
- Reduce heat to low and let stew cook for 1 hour, or until pork is tender.
