Ingredients

  • Potato batter
  • 4 large potatoes, peeled and finely grated
  • 1 small onion, finely grated (prevents browning)
  • 1 large egg
  • 3–4 tablespoons all‑purpose flour
  • Salt and black pepper, to taste
  • 1 tablespoon sour cream (optional, traditional in some homes)
  • Meat filling
  • 200–250 g (about ½ lbs) ground beef or beef–pork mix
  • 1 small onion, finely grated
  • Salt and black pepper, to taste
  • For frying & serving
  • Vegetable oil
  • Sour cream (for serving)

Directions

  • Prepare the potato mixture
  • Finely grate the potatoes and onion using a small‑hole grater. Season with salt and mix well. Add the egg, flour, black pepper, and sour cream if using. Stir until you have a thick, spoonable batter. Lightly squeeze out excess liquid if needed, but keep the mixture moist.
  • Make the meat filling
  • In a separate bowl, combine the ground meat with grated onion, salt, and pepper. Mix until just combined, then form small, thin patties.
  • Assemble the kolduny
  • Heat oil in a non‑stick skillet over medium heat. Spoon about 2 tablespoons of potato batter into the pan and flatten slightly. Place a meat patty on top, then cover it with another spoonful of potato mixture, sealing the meat completely inside.
  • Fry
  • Fry for about 4–5 minutes per side until deep golden brown and cooked through. Adjust heat as needed so the potatoes crisp without burning.
  • Serve
  • Serve hot with sour cream. Traditionally, nothing more is needed

  • Here’s a traditional Belarusian recipe for Kolduny (калдуны́)—the classic potato-based version with a meat filling, which is especially associated with Belarusian home cooking and differs from the flour‑dough dumplings found elsewhere in Eastern Europe. This style is essentially stuffed potato pancakes, fried until golden and served with sour cream.
  • This potato-based kolduny is the version most strongly associated with Belarus, especially alongside dishes like draniki.
  • Unlike Polish or Lithuanian kolduny/koldūnai, Belarusian kolduny are not boiled dumplings, but fried potato patties with a hidden filling.
