Chicken Thighs with Mushroom Gravy

Ingredients
- Chicken Thighs
- Chicken Seasoning:
- S&P
- Magic Poultry Seasoning
- Garlic Powder
- Onion Power
- 2 shallots, diced
- Avocado or olive oil
- 4 cloves of garlic, minced
- 1 container Portabella Mushrooms, sliced
- Herbs de Provence
- Garlic and Herb Seasoning
- 1 box, chicken stock
- 2 tbsp of butter
- 2 tbsp Worcestershire Sauce
- 2 tbsp soy sauce or tamari
- 2 tbsp Arrowroot starch or cornstarch
- Fresh Thyme
- ¼ Bunch of green onions
- Optional: golden potatoes, diced in small quarters
Directions
- Need: Large Skillet
- 1. Season chicken with seasonings, add oil to skillet and cook chicken on both sides until done. Remove chicken when done and set aside.
- 2. Add your butter, onions and garlic. Let cook down a few minutes. Then add in your potatoes if you wish and mushroom. Let cook down.
- 3. Mix 2 cups of chicken stock, Worcestershire and soy sauce choice (I like coconut aminos). Mix in half liquid to mushroom mixture. Add in thyme, cover and let cook down. Let mushrooms and potatoes cook down till tender while mixing.
- 4. Mix 1 cup of chicken stock and starch. Once potatoes and mushrooms are cooked. Add other half of liquid mixture and starch mixture to skillet. Let it cook in and thicken making a delicious gravy!
- 5. Add chicken back in, top with green onions, mix all up and ENJOY!!! 😋
