Ginger Chicken

Ingredients

  • - 2 tbsp avocado oil (or EVOO)
  • - 4 cloves garlic, minced
  • - 1 small piece of ginger, peeled and minced
  • - 1 lb ground chicken
  • - Juice from 1 lime (2 tbsp if bottled)
  • - 2 tbsp coconut aminos (or soy sauce)
  • - Mix of 1 tsp arrowroot (or cornstarch) and 1 tsp water
  • - 1/4 cup cilantro, chopped
  • - 1/2 tbsp red pepper flakes
  • - 2 green onions, chopped
  • - Romaine Lettuce (one or two heads)
  • - 2 cups cooked rice

Directions

  • Heat oil in pan. Simmer garlic and ginger over medium heat for 2min.
  • Add ground chicken. Cook thoroughly, stirring regularly.
  • Stir in lime, red pepper flakes, coconut aminos (or soy sauce) and arrowroot mix. Remove pan from heat, and let sit 2min. Stir in cilantro and green onions.
  • Spoon into leaves over rice. Remember to keep portions small to not overload the leaf.
