Ingredients
- - 2 tbsp avocado oil (or EVOO)
- - 4 cloves garlic, minced
- - 1 small piece of ginger, peeled and minced
- - 1 lb ground chicken
- - Juice from 1 lime (2 tbsp if bottled)
- - 2 tbsp coconut aminos (or soy sauce)
- - Mix of 1 tsp arrowroot (or cornstarch) and 1 tsp water
- - 1/4 cup cilantro, chopped
- - 1/2 tbsp red pepper flakes
- - 2 green onions, chopped
- - Romaine Lettuce (one or two heads)
- - 2 cups cooked rice
Directions
- Heat oil in pan. Simmer garlic and ginger over medium heat for 2min.
- Add ground chicken. Cook thoroughly, stirring regularly.
- Stir in lime, red pepper flakes, coconut aminos (or soy sauce) and arrowroot mix. Remove pan from heat, and let sit 2min. Stir in cilantro and green onions.
- Spoon into leaves over rice. Remember to keep portions small to not overload the leaf.
