Johnny Cakes

Baking • Bread, Dairy

Ingredients

  • 3 cups flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/4 C sugar
  • 1/2 C unsalted butter
  • 2/3 C whole milk

Directions

  • Combine the dry ingredients and cut in the butter until pea sized.
  • Add milk
  • Knead until smooth
  • Let dough rest for 10 minutes
  • Put into a greased 8-9” square or round pan
  • Bake at 350 degrees for 20-25 minutes
  • Remove and brush with milk… cook 5 more minutes

Notes

  • When making Johnny Cakes, it's often recommended to use cold butter, rather than room temperature butter. Here's why:
  • Cold Butter Benefits
  • Flaky texture: Cold butter helps create a flaky, tender crumb in Johnny Cakes.
  • Better structure: The cold butter doesn't melt and mix into the dough as easily, allowing for a more tender and layered texture.
  • Tips
  • Use cold ingredients: Keep your butter, milk, and other ingredients chilled to help maintain the dough's structure.
  • Don't overmix: Mix the dough just until the ingredients come together, then stop mixing to prevent developing the gluten in the flour.
