Gramma’s Cornbread

Ingredients

  • For 10” cast iron skillet:
  • 2 cup cornmeal
  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 cups water
  • For southwest version add:
  • 1/4 cup diced jalapeños (remove the seeds to cut the heat)
  • 1 cup diced green and red peppers mix
  • 4 ounces cheddar cheese (shredded or cut into cubes)

Directions

  • 1. Pour just enough peanut oil (about three tablespoons) to cover the bottom of the skillet.
  • 2. Place in oven and preheat to 450 degrees.
  • 3. Mix ingredients together.
  • 4. Pour mixture in pan and bake 30 - 35 minutes.

Notes

  • For baking pan:
  • - Set oven temp to 500 degrees
  • - 2.5 cups cornmeal
  • - 1.5 cups all purpose flour
  • - 3 tsp baking powder
  • - 2 tsp salt
  • - 2.5 cups water
