Gramma’s Cornbread

Ingredients
- For 10” cast iron skillet:
- 2 cup cornmeal
- 1 cup all purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 2 cups water
- For southwest version add:
- 1/4 cup diced jalapeños (remove the seeds to cut the heat)
- 1 cup diced green and red peppers mix
- 4 ounces cheddar cheese (shredded or cut into cubes)
Directions
- 1. Pour just enough peanut oil (about three tablespoons) to cover the bottom of the skillet.
- 2. Place in oven and preheat to 450 degrees.
- 3. Mix ingredients together.
- 4. Pour mixture in pan and bake 30 - 35 minutes.
Notes
- For baking pan:
- - Set oven temp to 500 degrees
- - 2.5 cups cornmeal
- - 1.5 cups all purpose flour
- - 3 tsp baking powder
- - 2 tsp salt
- - 2.5 cups water
