Amy’s Amazing 3-2-1 Smoker Ribs

Ingredients

  • 1 tbsp sea salt or Kosher salt
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp keto friendly golden brown sugar
  • 1 tsp garlic powder
  • t tsp onion powder
  • 1 tsp dried oregano
  • t tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 rack pork spare ribs or baby back ribs
  • 1 cup water
  • 1/2 cup Apple Cider Vinegar
  • 6 Tbsp Apple Cider Vinegar
  • 1 stick Butter
  • Low-sugar BBQ sauce (keto-friendly) optional

Directions

  • 1. Mix all dry ingredients in a bowl or ziplock bag.
  • 2. Cut Ribs into 3-4 Rib sections and apply Rub. This can be done ahead of time and left to marinade.
  • 3. Preheat smoker temp to 250 degrees. Put in ribs unwrapped and add wood chip pellets. I usually add a mix of pellets such as half fruit and half savory (ie, apple and hickory or cherry and Jack Daniel’s etc). Smoke uncovered for 3 hours.
  • 4. After 3 hours remove ribs and cover each section in its own foil boat. Melt the butter in a glass bowl in microwave. Pour about 2 tablespoons of Apple Cider Vinegar in the bottom of each foil boat. Baste butter on each rib top and bottom and close the boat up real tight careful not to spill any liquid out. Put the foil boats back in the smoker for 2 hours at 250 degrees.
  • 5. After 2 hours is done remove ribs from smoker, remove from foil and discard. Baste the ribs with low sugar BBQ sauce of your choice and return to smoker at 250 degrees for 1 more hour uncovered.
