Avocado Toast with Red Chile and Cilantro

Ingredients

  • 1 ripe Hass avocado, peeled and pitted
  • 1/2 fresno pepper, finely diced
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro
  • 2 slices whole-grain toast (such as 12-grain, whole wheat, or oat bran), brushed with extra-virgin olive oil
  • Coarse sea salt

Directions

  • 1. Put the avocado in a bowl and coarsely mash with a fork. Stir in the fresno pepper, lime juice, and cilantro. Divide between the slices of toast and sprinkle with sea salt.

Notes

  • Avocado toast has hit such a fever pitch (thank you, Instagram!) that some people are saying they're over it. Not me. Packed with fiber and heart-healthy monounsaturated fatty acids, avocados contain more potassium than a banana. And their creamy texture and rich flavor are simply made for a crunchy slice of toast; this is a near-perfect combination.
