Julia Child's Poached Eggs

Ingredients
- Egg
- Pin (Thumbtack)
- Pan of hot water
- White vinegar
Directions
- • Hot Water - Do not boil. Boiling or even rapidly simmering water will tear apart the fragile egg whites before they have time to set. Very hot water, just under the bare simmer is a much more gentle environment for cooking the eggs. Pull the pan from the heat if it begins to boil.
- • Pin - Poke the large end of the egg with a pin (thumbtack). Gently place the egg in the hot water and leave for exactly 10 seconds. Remove immediately.
- • Splash of Vinegar - About 1/4 cup of white vinegar helps the egg whites to set more quickly.
- • Add the Egg - Crack the egg into the water and let it poach for exactly 4 minutes
- • Place poached egg in cold water to rinse off the vinegar and to stop the cooking. Store in cold water, no cover, in fridge for 2-3 days.
- Reheat in simmering water for one minute.
