Glorious LC Bagels

Ingredients
- 1 1/2 cups mozzarella cheese
- 2 oz cream cheese
- 2 egg whites
- 1 1/2 Tbsp glucomannan powder (konjac root powder)
- 1/2 tsp salt
- 1/4 cup oat fiber
- 2 Tbsp whey isolate
- 1 tsp baking powder
Directions
- Preheat oven to 350'
- Mix dry ingredients in a small bowl and set aside.
- In a microwavable bowl, put mozzarella cheese and cream cheese in the microwave for 40 seconds stir, then another 30 seconds until melted, add egg whites and stir vigorously until well incorporated. Followed with dry ingredients, and stir until a dough forms.
- With greased hands, form dough into a long roll, then into bagels, pressing ends together. Bake until golden about 20-25 min
Notes
- Option: add a Tbsp of nutritional yeast, or some spices of choice for flavour. If you add the yeast you can add an additional egg white
